Caramelised Pineapple
"A perfect snack or pick me up for anytime of the day - especially breakfast! If you don't have honey, dissolve a tbsp sugar in a tbsp water, or use maple syrup if available. I think you'll love this one. "

INGREDIENTS

1 tbsp butter

1 pineapple, peeled, cored and cut into 8 long segments
4 peaches, halved and stone removed
1 tbsp honey
1 tbsp sugar dissolved in 1 tbsp water
pinch black pepper (optional)

METHOD
- Remove and discard the pineapple skin, then cut the flesh into 8 finger-long wedges.
- Melt the butter in a non-stick griddle or frying pan over a medium-hot heat. Add the pineapple pieces and drizzle over the honey. Griddle each side for 2–3 minutes, until caramelized and golden.
- Remove the pineapple from the heat and very lightly season with black pepper.
- Slide each piece on a wooden skewer, if available.
ADDITIONS
½ tsp vanilla essence, 2 tbsp. Greek yoghurt.
NOTES
The addition of a tiny pinch black pepper gives this a gorgeous warming flavour, but feel free to leave it out.
